BERRY PROTEIN CRUMBLE.

Berry & Banana Protein Squares.


Let me ask you a question: What do you get when you combine fruit, protein and granola? An AMAZING breakfast, mid-morning snack or dessert that tastes like a decadent sweet treat but is actually super healthy!

You heard it here first, these berry and banana squares are not only tasty, but really good for you!*


Unlike traditional crumble toppings, this recipe doesn’t require butter or sugar yet it still leaves you with glorious crunchy clusters. The topping is very similar to the base in that it uses oats and berry protein, but I wanted to make sure the topping was the star of the show!


Once you’ve prepped your base and the topping, you can focus on the middle.

Similar to a traditional pie filling, I defrosted some raspberries, added cinnamon, sweetener and a touch of cornflour. Of course adding cornflour is optional, but I find it helps make everything a little bit gooeyer!

TOP TIP: if you want to make this recipe gluten free, I’d suggest using a mix of almond four, quinoa flour and oats (providing they’re GF of course!) it adds an extra layer of flavour, texture and reduces the amount of oats which I know can affect those who are gluten intolerant.

Serving Size.

Makes 9 squares.


Ingredients.

For the Base –

For the Middle –

  • 200g Frozen Raspberries
  • 2 tbsp Natvia Sweetener
  • 1tsp Cinnamon
  • 1-2 tbsp Cornstarch
  • 1/2 Banana

For the Topping –


Method.

  1. Pre-heat your oven to 180 degrees.
  2. Combine all base ingredients into a bowl, then press into a lined baking tray.
  3. Defrost the raspberries, drain excess water.
  4. Add cinnamon, sweetener and cornstartch to the berries – mix well.
  5. Pour the mixture on top of the base and place banana coins on top.
  6. Mix all the topping ingredients in a bowl, mix using your hands and gently sprinkle on top of the middle layer.
  7. Place into the oven for 20-25 minutes or until golden brown.
  8. Enjoy!
