SEEING AS THE WHOLE WORLD IS BAKING BANANA BREAD….

Here are my Favourite Recipes!

If you’ve been on Instagram or Twitter recently (which of course you have because what else is there to do whilst in lockdown?) you’ll probably have noticed that the whole world seems to be baking banana bread. Sound familiar?

It might be something to do with the sheer amounts of time we’ve now all been granted or, because the huge bunch of bananas we bought are now overripe and looking pretty questionable. Whatever the reason, it’s a fact that 90% of the population seem to be baking the infamous loaf.


Looking at all the attempts online spurred this post if I’m honest. I’ve made more than a handful of banana breads in my time (spoken like a true 25 year old…) and wanted to point you in the direction of them here to save you trolling through my previous recipes.

As always, my bakes and homemade creations are sometimes healthier alternatives but that doesn’t mean to say that the real thing isn’t as delicious. So whether you’re looking for a decedant loaf or a lighter verison, feast your eyes on the below and enjoy!

Almond & Cinnamon Protein Banana Bread.

Ingredients.

  • 2 Medium Ripe Bananas
  • 60g Free Soul Vanilla Protein Powder
  • 170g Flour
  • 2 tsp Baking powder
  • 60g Egg whites
  • 10g Sweetener
  • 2tsp Cinnamon
  • 150ml Water
  • A pinch of salt
  • 15g Flaked almonds (additional 5g for decoration – optional!)

Method.

  1. Pre-heat your oven to 180 degrees.
  2. Line a loaf or baking tin with baking paper and spray with Fry Light.
  3. Sieve the protein powder, flour, baking powder, stevia, cinnamon and pinch of salt into a large mixing bowl.
  4. In a separate bowl, mix the egg whites, water and mashed bananas.
  5. Add the wet ingredients to the dry, mix well.
  6. Sprinkle the almonds into the mixture, then pour into your lined tin.
  7. Place in the centre of your oven for 25-30 minutes.
  8. Using a sharp knife or skewer, poke the centre of the bread, and if it comes out clean, your loaf is ready.
  9. Remove from your baking tin and leave to cool on a cooling rack for 10 minutes.
  10. Divide into 8 equal slices.
  11. Enjoy!

Apple, Banana & Blueberry Loaf.

Ingredients.

  • 45g Ground almonds
  • 60g Free Soul Vanilla Protein Powder
  • 100g Apple sauce
  • 1 Egg
  • 1 Banana
  • 30g Egg whites
  • 100g Blueberries (fresh or frozen)
  • 15g Sweetener (Stevia or Candarel)
  • 1/2 tsp baking powder
  • ½ tsp vanilla extract

Method.

  1. Pre-heat your oven to 190 degrees.
  2. Place all the ingredients (except blueberries) into a food processor or Nutri-Bullet and mix well.
  3. Once the mixture is combined, stir in the blueberries.
  4. Line a loaf or baking tin with baking paper, and spray with fry light.
  5. Pour the mixture into the tin and place in the centre of your oven for 20-25 minutes.
  6. Remove the loaf from your baking tin, and leave to cool on a cooling rack for 10 minutes.
  7. Divide into 8 equal slices.
  8. Enjoy!

Double Chocolate Chip Banana Bread.

Ingredients.

  • 30g Free Soul Chocolate Vegan Protein
  • 3 Bananas
  • 1 Egg
  • 1tsp Vanilla Extract
  • 2tbsp Coconut Oil
  • 230g Flour
  • 3tbsp Sweetener
  • 1tbsp Cinnamon
  • 1/2 tsp Baking Powder
  • 80g 70% Dark Chocolate or Chocolate Chips

Method.

  1. Add all dry ingredients (except chocolate chips) into large bowl and combine.
  2. In a separate bowl combine all wet ingredients.
  3. Pour the dry ingredients into the wet, mix well using a a spatula until a thick batter starts to form.
  4. Add half of the chocolate chips to the mixture.
  5. Line a baking tray with baking paper and spray with fry light.
  6. Top the loaf mixture with the remaining chocolate chips and 1/2 a banana.
  7. Bake at 180 degrees for 20-22 mins or until the knife comes out clean.
  8. Allow too cool before slicing.
  9. Enjoy!
